PUBLIC RECORDS. CLEARER TERRITORIES.

Open methodology

The math stays in plain sight.

REPORTED is the public record.

Receipts come from the Texas Comptroller mixed beverage receipts filings. Liquor, wine, beer and cover charges remain distinct. Corrections replace the same permit and month key with an appended change log.

ESTIMATE is arithmetic with assumptions.

Net liquor = filed liquor receipts ÷ TAX_DIVISOR (1.0825). Estimated liquor purchasing = net liquor × DEFAULT_POUR_COST (0.20). Estimated drinks = net liquor ÷ the assumed average drink price. Dollars round to two significant figures and drinks to the nearest hundred.

  • DRINK_PRICE_Club/lounge: $15 per drink · assumption from Config
  • DRINK_PRICE_Venue concession: $14 per drink · assumption from Config
  • DRINK_PRICE_Wine-led: $16 per drink · assumption from Config
  • DRINK_PRICE_Beer-led: $9 per drink · assumption from Config
  • DRINK_PRICE_Cocktail-led: $13 per drink · assumption from Config

A month must earn COMPLETE.

Its distinct permit count must be at least 95% of the median of the prior three complete months. The external sync validates this rule before labeling data COMPLETE. PARTIAL months are still filing and are excluded from rankings and previews. The bootstrap baseline must be established by the external agent.

Archetypes and confidence

Archetypes group venues by beverage and operating context: cocktail-led, club/lounge, wine-led dining, beer-led/icehouse and venue concession. Unclassified stays unclassified until supporting records exist. Confidence is published as HIGH, MEDIUM or LOW by the external metrics process alongside the exact assumptions; it is not a guarantee. We do not infer a confidence score from missing evidence.

Context, never a judgment.

No list ranks venues by decline or judges their worth, credit or survival. Multi-outlet permits are flagged. Private drink-margin records never appear publicly. Ownership merges require two independent supporting signals and an Applied review status.
